A rich and savory Slow-Cooker Rustic French Onion Soup featuring tender caramelized onions, beef broth, and toasted Gruyère baguette slices.
Ingredients
- 1/4 cup butter, melted
- 1/4 teaspoon dried thyme leaves
- 1 teaspoon pepper
- 1 teaspoon salt
- 12 cups thinly sliced onions (about 6 large)
- 5 tablespoons Gold Medal all-purpose flour
- 1/4 cup water
- 1 tablespoon apple cider vinegar (substitute for sherry)
- 3/4 cup extra beef broth (substitute for sherry liquid volume)
- 1 carton (32 oz) beef-flavored broth (4 cups)
- 6 oz Gruyère cheese, shredded (1 1/2 cups)
- 20 slices (1/2 inch thick) baguette
- Fresh thyme leaves, optional
Instructions
- Spray a 6- to 7-quart slow cooker with cooking spray. Place the sliced onions, melted butter, salt, pepper, and dried thyme into the slow cooker. In a medium bowl, whisk together the flour, water, apple cider vinegar, and the 3/4 cup of extra beef broth until smooth. Pour this mixture over the onions and stir to combine.
- Cover and cook on Low heat for 9 to 10 hours. The goal is for the onions to become very soft and turn a deep brown color.
- Stir the carton of beef broth into the slow cooker. Increase the heat setting to High. Cover and cook for another 10 to 15 minutes until the soup is thoroughly hot.
- Set your oven to broil. Line a baking sheet with foil. Arrange the baguette slices in a single layer. Broil about 3 inches from the heat for 2 minutes, turning once, until the bread is lightly browned.
- Sprinkle the shredded Gruyère cheese evenly over the toasted bread slices. Broil for 1 minute longer or until the cheese is bubbly and melted. To serve, float 2 cheese toasts on top of each bowl of soup and sprinkle with fresh thyme.
Notes
I substituted the traditional dry sherry with a mix of extra beef broth and apple cider vinegar to keep this recipe alcohol-free while maintaining a balanced flavor profile.
