Description
A comforting, one-pot Lebanese stew featuring tender chicken, green beans, and a rich tomato broth spiced with aromatic 7 Spice blend.
Ingredients
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1/4 tsp crushed red pepper
- 1/4 cup fresh cilantro, chopped
- 6 oz tomato paste
- 2 (15 oz) cans diced tomatoes
- 4 cups water
- 1 lb chicken breast
- 20 oz frozen cut green beans
- 1 tsp 7 Spice blend
- 2 bay leaves
- 1/2 tsp black pepper
- 1 1/2 tsp salt
Instructions
- In a large pot over medium heat, warm the olive oil and sauté the minced garlic, cilantro, and crushed red pepper for about 1 minute until fragrant.
- Stir in the tomato paste and cook for 1 minute to caramelize it and deepen the flavor.
- Pour in the diced tomatoes and water, stirring well to create a smooth broth base.
- Add the frozen green beans, raw chicken breast, and bay leaves into the liquid. Season with salt, pepper, and 7 Spice. Cover and simmer on low for 25 minutes.
- Remove the cooked chicken and shred it with two forks. Discard the bay leaves.
- Return the shredded chicken to the pot and simmer uncovered for another 15-20 minutes to thicken the stew and meld the flavors.
Notes
Serve with vermicelli rice or warm pita bread. Leftovers store well in the fridge for up to 5 days.
