Description

A comforting, one-pot Lebanese stew featuring tender chicken, green beans, and a rich tomato broth spiced with aromatic 7 Spice blend.


Ingredients

  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/4 tsp crushed red pepper
  • 1/4 cup fresh cilantro, chopped
  • 6 oz tomato paste
  • 2 (15 oz) cans diced tomatoes
  • 4 cups water
  • 1 lb chicken breast
  • 20 oz frozen cut green beans
  • 1 tsp 7 Spice blend
  • 2 bay leaves
  • 1/2 tsp black pepper
  • 1 1/2 tsp salt

Instructions

  1. In a large pot over medium heat, warm the olive oil and sauté the minced garlic, cilantro, and crushed red pepper for about 1 minute until fragrant.
  2. Stir in the tomato paste and cook for 1 minute to caramelize it and deepen the flavor.
  3. Pour in the diced tomatoes and water, stirring well to create a smooth broth base.
  4. Add the frozen green beans, raw chicken breast, and bay leaves into the liquid. Season with salt, pepper, and 7 Spice. Cover and simmer on low for 25 minutes.
  5. Remove the cooked chicken and shred it with two forks. Discard the bay leaves.
  6. Return the shredded chicken to the pot and simmer uncovered for another 15-20 minutes to thicken the stew and meld the flavors.

Notes

Serve with vermicelli rice or warm pita bread. Leftovers store well in the fridge for up to 5 days.
