A velvety, sugar-free chocolate mousse that whips up in just 10 minutes using 4 simple ingredients.


Ingredients

  • 1/4 cup unsweetened cocoa powder (Dutch-processed preferred)
  • 1 cup heavy whipping cream (cold)
  • 1 teaspoon vanilla extract
  • 1 teaspoon stevia glycerite (or powdered sweetener to taste)

Instructions

  1. Add the heavy whipping cream, sweetener, cocoa powder, and vanilla extract to a food processor bowl or large mixing bowl.
  2. Pulse on low speed briefly to incorporate the cocoa powder, then increase speed to high. Process for roughly 45 to 60 seconds.
  3. Watch closely and stop immediately once the mixture thickens into a creamy mousse texture. Do not over-mix or it will turn to butter.
  4. Spoon or pipe into four serving dishes. Serve immediately or chill for later.

Notes

Ensure your heavy cream is very cold for the best volume. If using a powdered sweetener, make sure it is fully powdered (confectioners style) to avoid a gritty texture.
