Description

A fresh and vibrant grape and apple salad perfect for autumn gatherings.


Ingredients

  • 350g (12 oz) red grapes, halved
  • 2 large Granny Smith apples, diced
  • 250g (2½ cups) green cabbage, thinly sliced
  • 120g (2 cups) romaine lettuce, chopped
  • 40g (¾ cup) fresh arugula
  • 3 tablespoons golden raisins
  • 60g (½ cup) chopped walnuts
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon honey
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Whisk together balsamic vinegar, apple cider vinegar, honey, salt, and pepper in a large bowl.
  2. Slowly add olive oil while whisking until dressing thickens.
  3. Add sliced cabbage to dressing and toss well. Let sit for 15 minutes.
  4. Add diced apples and raisins to the cabbage mixture.
  5. Halve the grapes and set aside.
  6. Add romaine lettuce and arugula to the bowl, tossing gently.
  7. Top with halved grapes and chopped walnuts.
  8. Give everything a final gentle toss and serve immediately.

Notes

  • Toast walnuts for extra flavor
  • Cabbage can marinate in dressing up to 4 hours ahead
  • Add delicate ingredients just before serving for best texture
