Description
A fresh and vibrant grape and apple salad perfect for autumn gatherings.
Ingredients
- 350g (12 oz) red grapes, halved
- 2 large Granny Smith apples, diced
- 250g (2½ cups) green cabbage, thinly sliced
- 120g (2 cups) romaine lettuce, chopped
- 40g (¾ cup) fresh arugula
- 3 tablespoons golden raisins
- 60g (½ cup) chopped walnuts
- 2 tablespoons balsamic vinegar
- 3 tablespoons extra virgin olive oil
- 1 teaspoon honey
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- Whisk together balsamic vinegar, apple cider vinegar, honey, salt, and pepper in a large bowl.
- Slowly add olive oil while whisking until dressing thickens.
- Add sliced cabbage to dressing and toss well. Let sit for 15 minutes.
- Add diced apples and raisins to the cabbage mixture.
- Halve the grapes and set aside.
- Add romaine lettuce and arugula to the bowl, tossing gently.
- Top with halved grapes and chopped walnuts.
- Give everything a final gentle toss and serve immediately.
Notes
- Toast walnuts for extra flavor
- Cabbage can marinate in dressing up to 4 hours ahead
- Add delicate ingredients just before serving for best texture
