Chocolate Lava Cakes Recipe

Description

Rich molten chocolate cakes with a gooey center, made with simple pantry ingredients.


Ingredients

  • 1/4 cup plus 1 tsp sugar
  • 4 Tbsp all-purpose flour
  • 1/4 tsp fine sea salt
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 2 large egg yolks
  • 6 oz semisweet chocolate chips
  • 8 Tbsp unsalted butter, plus extra for greasing

Instructions

  1. Preheat your oven to 450˚F. Thoroughly butter four 8-oz ramekins and dust them with flour, tapping out the excess.
  2. Set up a double boiler with simmering water. Melt the chocolate chips and 8 tablespoons of butter together in a bowl set over the water, stirring until smooth. Remove from heat.
  3. In a large bowl, beat the eggs, egg yolks, sugar, and salt on high speed for about 5 minutes until pale and thick.
  4. Fold the melted chocolate mixture and vanilla into the egg mixture until combined. Gently fold in the flour until just incorporated.
  5. Pour batter into the prepared ramekins. Bake for 10-12 minutes until sides are set but centers still jiggle slightly.
  6. Cool for 1 minute, then invert onto plates. Serve immediately with powdered sugar or berries.

Notes

If using smaller 4 oz ramekins, reduce baking time to 6-8 minutes.
