A vibrant mix of tender greens, sweet cranberries, and creamy cheese that works for any season or occasion.
Ingredients
- 3 tablespoons extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1/2 cup plus 2 tablespoons dried cranberries, divided
- 3 cups fresh baby spinach leaves
- 1 1/2 cups baby arugula
- 1/2 cup walnut pieces
- 1/4 cup soft goat cheese crumbles
- Fresh ground black pepper and sea salt to taste
Instructions
- Process olive oil, vinegar, and 2 tablespoons cranberries in food processor for 25-30 seconds until chunky. Let rest 25-30 minutes at room temperature.
- Wash and thoroughly dry spinach and arugula using salad spinner and clean towels.
- Pour cranberry dressing into large mixing bowl. Add remaining cranberries, greens, walnuts, and goat cheese.
- Season with pepper and salt. Toss gently but thoroughly until all ingredients are well coated.
- Taste and adjust seasonings. Serve immediately for best texture.

- Make dressing first and let it develop flavor while prepping other ingredients
- Completely dry greens for best dressing adhesion
- Add cheese just before serving to prevent mushiness
