Ingredients

  • 2 tablespoons olive oil
  • ¼ teaspoon kosher salt
  • 1 large red onion

Instructions

  1. Start by preheating your oven to 400°F so it is nice and hot when you are ready. Take your large red onion, peel away the papery outer skin, and slice it into rounds that are about ¼-inch thick, then gently separate the rings with your fingers.
  2. Place the onion rings into a rimmed glass baking dish or spread them out on a baking sheet lined with parchment paper. Drizzle the olive oil over the top and sprinkle evenly with the kosher salt, then use your hands to toss everything until every ring is coated and glistening.
  3. Roast the onions in the center of the oven for about 20 to 25 minutes. You will want to give them a good stir halfway through the cooking time to ensure they brown evenly, removing them once they look soft, caramelized, and slightly charred on the edges.
