Description
Crispy homemade taquitos filled with a creamy chicken and cheese mixture. These are easy to make, freezer-friendly, and perfect for a fun family dinner.
Ingredients
- 16 small corn tortillas (white or yellow)
- 1/2 cup salsa verde or green enchilada sauce
- 1 1/2 cups Mexican shredded cheese or Colby Jack
- 4 oz cream cheese, diced
- Neutral oil for frying
- 2 tsp taco seasoning
- 3 cups shredded cooked chicken
Instructions
- In a large bowl, combine the shredded chicken, cream cheese, shredded cheese, salsa verde, and taco seasoning. Mash well with a fork until the mixture is uniform and creamy.
- Heat a skillet over medium heat and warm each corn tortilla for 15-30 seconds per side. This step is vital to make them pliable so they do not crack when rolled.
- Spoon about 3 tablespoons of the filling onto the center of a warm tortilla. Roll the tortilla tightly around the filling and place it seam-side down on a plate.
- Heat approximately 1/2 inch of oil in a heavy pan to 350°F. Carefully place the taquitos in the oil, seam-side down first to seal.
- Fry in batches for 2-3 minutes per side until golden brown and crispy. Remove and drain on a paper towel-lined plate before serving.
Notes
To bake instead of fry, spray the rolled taquitos with cooking spray and bake at 400°F for 15-20 minutes until crispy.
