A cozy, crispy Chicken Parmesan recipe featuring tender breaded chicken breast, savory marinara, and melted mozzarella cheese.
Ingredients
- 2 large chicken breasts (about 1.5 lbs total)
- 1/2 cup Italian bread crumbs
- 1/2 cup shredded parmesan cheese
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 tsp salt
- 1/2 tsp black pepper
- 2 Tbsp light olive oil
- 3 cups marinara sauce
- 1 cup shredded mozzarella cheese (approx 4 oz)
- 1 Tbsp fresh basil or parsley for garnish
Instructions
- Slice the chicken breasts in half lengthwise to create four even cutlets. Pound them between plastic wrap until they are a uniform 1/3-inch thickness. Season well with salt and pepper.
- Prepare three shallow bowls: one with flour mixed with salt/pepper, one with beaten eggs, and one with a mixture of bread crumbs and parmesan cheese. Dredge each cutlet in flour, dip in egg, and press firmly into the crumb mixture.
- Heat olive oil in a large skillet over medium heat. Fry the chicken in batches for 3-4 minutes per side until the crust is golden brown. Remove from heat.
- Spread half of the marinara sauce in the bottom of a 9×13 baking dish. Place the fried chicken on top in a single layer.
- Top each piece of chicken with the remaining sauce and a generous amount of shredded mozzarella cheese.
- Bake at 425°F for 15-18 minutes, or until the cheese is melted and bubbling and the chicken registers 165°F internally. Garnish with fresh herbs before serving.
Notes
For extra crispy chicken, use less sauce on the bottom of the pan or serve the sauce on the side.
