Ingredients

  • 1 pound American cheese or Velveeta, cut into chunks
  • ½ cup whole milk
  • 1 (4-ounce) can diced green chiles, drained
  • 1 teaspoon taco seasoning
  • Smoked paprika for garnish (optional)
  • Tortilla chips for serving

Instructions

  • Add cheese chunks and milk to a medium saucepan over medium-low heat.
  • Stir frequently until cheese is completely melted and smooth, about 5-7 minutes.
  • Remove from heat and stir in green chiles and taco seasoning until combined.
  • Transfer to serving bowl and sprinkle with paprika if desired.
  • Serve immediately with tortilla chips.

Notes

  • Keep heat at medium-low to prevent cheese from becoming grainy
