Description

A hearty one-pot meal that combines tender pasta with seasoned ground beef and melted cheese for the perfect comfort food dinner.


Ingredients

  • pounds ground beef
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 ounce packet taco seasoning
  • 2¼ cups water
  • 1¼ cups jarred salsa
  • 9 ounces uncooked rotini pasta
  • 1¾ cups shredded Mexican cheese blend
  • Optional toppings: diced tomatoes, avocado, tortilla chips, cilantro

Instructions

  • Heat large deep skillet over medium-high heat for 2 minutes.
  • Add ground beef, season with salt and pepper, brown for 8-10 minutes.
  • Drain excess grease from the skillet.
  • Stir taco seasoning into beef, cook 30 seconds until fragrant.
  • Add water, salsa, and pasta. Bring to rolling boil.
  • Cover, reduce heat to medium-low, simmer 18-20 minutes stirring every 5 minutes.
  • Remove from heat, stir in cheese until melted.
  • Season to taste and serve with desired toppings.

Notes

  • Ground turkey or chicken can substitute for beef
  • Use vegetable broth instead of water for richer flavor
  • Pasta continues cooking after heat is turned off, so don’t overcook
