A hearty one-pot meal that combines tender pasta with seasoned ground beef and melted cheese for the perfect comfort food dinner.
Ingredients
- 1¼ pounds ground beef
- ¾ teaspoon salt
- ¼ teaspoon black pepper
- 1 ounce packet taco seasoning
- 2¼ cups water
- 1¼ cups jarred salsa
- 9 ounces uncooked rotini pasta
- 1¾ cups shredded Mexican cheese blend
- Optional toppings: diced tomatoes, avocado, tortilla chips, cilantro
Instructions
- Heat large deep skillet over medium-high heat for 2 minutes.
- Add ground beef, season with salt and pepper, brown for 8-10 minutes.
- Drain excess grease from the skillet.
- Stir taco seasoning into beef, cook 30 seconds until fragrant.
- Add water, salsa, and pasta. Bring to rolling boil.
- Cover, reduce heat to medium-low, simmer 18-20 minutes stirring every 5 minutes.
- Remove from heat, stir in cheese until melted.
- Season to taste and serve with desired toppings.
Notes
- Ground turkey or chicken can substitute for beef
- Use vegetable broth instead of water for richer flavor
- Pasta continues cooking after heat is turned off, so don’t overcook
