Ingredients

Spiced Peaches:

  • 68 ripe peaches, peeled and sliced
  • 1/4 cup packed light brown sugar
  • 3/4 teaspoon ground cinnamon
  • Pinch of sea salt

Vanilla Cream:

  • 1 3/4 cups heavy whipping cream, cold
  • 1/3 cup powdered sugar
  • 1 1/2 teaspoons pure vanilla extract

Instructions

  • Prepare peaches: Blanch in boiling water 30 seconds, transfer to ice water, peel, and slice. Toss with brown sugar, cinnamon, and salt. Let sit 5 minutes.
  • Make whipped cream: In a chilled bowl, whip cold heavy cream until it begins to thicken. Add powdered sugar and vanilla, whip to soft peaks.
  • Assemble: Spoon spiced peaches and syrup into serving dishes. Top with vanilla whipped cream. Dust with extra cinnamon if desired.
