Description

Crispy, golden potatoes seasoned with Old Bay seasoning create the perfect side dish for any meal.


Ingredients

  • 2 pounds baby potatoes or small red potatoes, halved
  • 3 tablespoons olive oil
  • 2½ tablespoons Old Bay seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for serving)

Instructions

  1. Preheat oven to 425°F and line a large baking sheet with parchment paper.
  2. Wash and halve potatoes, then pat completely dry with paper towels.
  3. In a large bowl, toss potatoes with olive oil, Old Bay seasoning, salt, and pepper until evenly coated.
  4. Arrange potatoes cut-side down on prepared baking sheet, leaving space between each piece.
  5. Roast for 25-30 minutes without moving them.
  6. Flip potatoes and continue roasting for 15-20 minutes until golden brown and crispy.
  7. Sprinkle with fresh parsley before serving.

Notes

Don’t overcrowd the pan – use two baking sheets if necessary for the crispiest results. Let potatoes come to room temperature before roasting for even cooking.
