Description
Crispy, golden potatoes seasoned with Old Bay seasoning create the perfect side dish for any meal.
Ingredients
- 2 pounds baby potatoes or small red potatoes, halved
- 3 tablespoons olive oil
- 2½ tablespoons Old Bay seasoning
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (for serving)
Instructions
- Preheat oven to 425°F and line a large baking sheet with parchment paper.
- Wash and halve potatoes, then pat completely dry with paper towels.
- In a large bowl, toss potatoes with olive oil, Old Bay seasoning, salt, and pepper until evenly coated.
- Arrange potatoes cut-side down on prepared baking sheet, leaving space between each piece.
- Roast for 25-30 minutes without moving them.
- Flip potatoes and continue roasting for 15-20 minutes until golden brown and crispy.
- Sprinkle with fresh parsley before serving.
Notes
Don’t overcrowd the pan – use two baking sheets if necessary for the crispiest results. Let potatoes come to room temperature before roasting for even cooking.
