Ingredients
Chicken:
- 1¼ pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- ½ teaspoon garlic powder
- ⅓ cup cornstarch
- 3 tablespoons vegetable oil
Pineapple Glaze:
- ½ cup packed brown sugar
- ⅓ cup pineapple juice
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons cornstarch
- 1¼ cups fresh pineapple chunks
- Toasted sesame seeds and sliced green onions for garnish
Instructions
- Season chicken with garlic powder, then toss with cornstarch until evenly coated.
- Heat oil in a large skillet over medium-high heat. Add chicken and cook 7-9 minutes, stirring occasionally, until golden brown.
- In a bowl, whisk together brown sugar, pineapple juice, soy sauce, rice vinegar, and cornstarch until smooth.
- Pour sauce over chicken, add pineapple chunks, and reduce heat to medium-low.
- Simmer 12-15 minutes, stirring gently, until sauce thickens and coats the chicken.
- Serve over rice, garnished with sesame seeds and green onions.
Notes
Chicken thighs stay more tender than breasts, but either works well. For best results, don’t rush the simmering step, let the sauce develop its full glossy texture.
