Caramelised Pink Grapefruit

Description

A simple, elegant breakfast or dessert featuring juicy pink grapefruit topped with bubbling, spiced brown sugar.


Ingredients

  • 2 tbsp unsalted butter (optional)
  • 1/2 tsp ground cinnamon
  • Pinch of sea salt
  • 2 large pink grapefruits
  • Fresh mint leaves for garnish
  • 4 tbsp brown sugar

Instructions

  1. Preheat your oven’s broiler to high and position the rack 4-6 inches from the heat source. Slice a thin layer off the bottom of each grapefruit so they sit flat, then cut them in half horizontally.
  2. Place the grapefruit halves on a baking sheet. Run a small knife around the edges and between the segments to loosen the fruit, being careful not to pierce the skin.
  3. Combine the brown sugar, cinnamon, and salt in a small bowl. Sprinkle this mixture evenly over the cut surfaces of the grapefruit, and top each with a small dot of butter if using.
  4. Broil for 4 to 7 minutes, watching closely. The sugar should be bubbling vigorously and the edges slightly charred. Let cool slightly before serving with fresh mint.

Notes

Serve immediately while warm. Great with yogurt or vanilla ice cream.
