Ingredients
- 4 salmon fillets (approx 6 oz each)
- 8 oz cream cheese, softened
- 3 cloves garlic, minced
- 2 cups fresh spinach, packed
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1 tbsp fish seasoning blend
- 4 tbsp butter, cut into pieces
- Salt and black pepper to taste
Instructions
- Preheat your broiler to high setting (approx 500°F). Place the butter pieces into an oven-safe skillet or baking dish.
- Using a sharp knife, carefully cut a slit into the side of each salmon fillet to create a pocket, being careful not to cut all the way through.
- In a mixing bowl, combine the softened cream cheese, spinach, minced garlic, Parmesan cheese, salt, and pepper. Mix until thoroughly combined.
- Stuff each salmon pocket generously with the cream cheese mixture.
- Brush the tops of the salmon with olive oil and sprinkle evenly with the seasoning blend.
- Place the stuffed fillets into the skillet with the butter. Position the rack 8-10 inches from the heat source.
- Broil for 6-9 minutes, watching closely, until the salmon is opaque and cooked through and the top is golden brown. Spoon pan juices over the fish before serving.
Notes
Ensure the cream cheese is fully softened for easier mixing. Serve immediately with lemon wedges if desired.
