Roasted Peaches with Honey and Pecans – Sweet, caramelized roasted peaches with honey and pecans create the perfect simple dessert for any occasion.
Ingredients
- 6 large ripe peaches, halved and pitted
- 1/4 cup pure honey
- 3/4 cup chopped pecans
- 3 tablespoons unsalted butter, cut into pieces
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon vanilla extract (optional)
- Pinch of sea salt
- Greek yogurt or vanilla ice cream for serving
Instructions
- Preheat oven to 375°F.
- Arrange peach halves cut-side up in a 9×13 inch baking dish.
- Drizzle with lemon juice, then brush generously with honey.
- Scatter pecans over and around peaches, dot with butter pieces.
- Roast 25-30 minutes until tender and caramelized.
- Cool 5 minutes before serving with Greek yogurt or ice cream.
Notes
Choose ripe but firm peaches for best results. Toast pecans beforehand for extra flavor. Can be made ahead and served at room temperature.
