Description
Soft, thick, and buttery sugar cookie bars topped with a creamy vanilla almond frosting. An easy no-roll dessert perfect for any celebration.
Ingredients
- 1 cup (200g) granulated sugar
- 1 cup (225g) unsalted butter, softened
- 2 large eggs, room temperature
- 1 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- 2 1/4 cups (315g) all-purpose flour
- 1 Tbsp cornstarch
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup (113g) unsalted butter (for frosting)
- 2 1/4 cups (270g) powdered sugar
- 2 Tbsp heavy cream
- 1 tsp vanilla extract (for frosting)
- Food coloring (optional)
- Sprinkles (optional)
Instructions
- Preheat your oven to 350°F (175°C) and thoroughly grease a 9×13 inch baking pan with butter or cooking spray.
- In a medium bowl, whisk together the flour, cornstarch, baking powder, and salt until well combined and lump-free.
- Using a stand mixer or hand mixer, cream the 1 cup of softened butter and granulated sugar together until smooth and blended.
- Beat in the eggs one at a time, followed by the vanilla and almond extracts, scraping down the bowl as needed.
- Gradually add the flour mixture to the wet ingredients, mixing on low speed just until combined; do not overmix.
- Press the thick dough evenly into the prepared baking pan using greased hands or a spatula.
- Bake for 14-17 minutes, or until the center is just set and the edges are barely starting to color (do not overbake).
- Allow the bars to cool completely in the pan on a wire rack for at least 90 minutes.
- For the frosting, whip the remaining 1/2 cup butter, powdered sugar, cream, and vanilla until light and fluffy.
- Spread the frosting over the cooled bars, add sprinkles if desired, and cut into squares.
Notes
Store bars in an airtight container at room temperature for up to 3 days. For cleaner cuts, wipe your knife with a warm damp cloth between slices.
