Description

A rich and creamy homemade strawberry cheesecake with a buttery graham cracker crust and fresh strawberry topping. Perfect for spring and summer desserts.


Ingredients

  • 1/4 cup cornstarch
  • 1/2 cup unsalted butter, melted
  • 1/2 cup sour cream
  • 4 large eggs, room temperature
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups granulated sugar, divided
  • 1 1/2 cups graham cracker crumbs
  • 4 cups fresh strawberries, hulled and sliced
  • 32 oz cream cheese, softened (4 blocks)

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan. Combine the graham cracker crumbs, 1/4 cup sugar, and melted butter until it resembles wet sand. Press firmly into the bottom of the pan and bake for 10 minutes. Set aside to cool.
  2. Beat the softened cream cheese and 1 cup of sugar on medium-low speed until smooth. Mix in the sour cream, vanilla, and lemon juice. Add eggs one at a time, mixing on low just until incorporated. Do not overmix.
  3. Pour the batter over the crust. Wrap the pan in foil and place in a roasting pan filled with hot water (water bath). Bake for 55-70 minutes until the edges are set but the center wobbles slightly.
  4. Turn off the oven and open the door slightly. Let the cheesecake cool inside for 1 hour. Remove, cool completely on a rack, then refrigerate for at least 4 hours or overnight.
  5. In a saucepan, combine strawberries, remaining 1/4 cup sugar, and cornstarch. Cook over medium heat until thickened and glossy (5-7 mins). Cool completely before topping the chilled cheesecake.
