Description

A warm, cheesy spinach dip made with Greek yogurt, cream cheese, and mozzarella. Baked until bubbly and golden, it is the perfect easy appetizer.


Ingredients

  • 8 oz cream cheese, softened
  • 1 cup Greek yogurt
  • 10 oz frozen spinach, thawed and squeezed dry
  • 1/2 cup grated Parmesan cheese
  • 1 1/4 cup shredded mozzarella cheese, divided
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp freshly ground black pepper
  • 1 tsp kosher salt
  • Cooking spray

Instructions

  1. Preheat your oven to 350°F immediately so it is ready to go, and prepare an 8×11 inch baking dish by lightly coating it with non-stick spray. Take your thawed frozen spinach and place it in a colander or wrap it in a clean kitchen towel, then squeeze it firmly over the sink until you have removed as much excess liquid as humanly possible.
  2. Grab a large mixing bowl and combine the softened cream cheese with the Greek yogurt, stirring vigorously until the texture is completely smooth and uniform. Add the drained spinach, one cup of the mozzarella, the Parmesan, garlic powder, onion powder, salt, and pepper to the bowl and fold everything together until well incorporated.
  3. Transfer the thick mixture into your prepared baking dish, using a spatula to spread it out into a flat, even layer that reaches all the corners. Sprinkle the remaining quarter cup of mozzarella cheese over the top to create a delicious crust that will protect the creamy filling while it bakes.
  4. Place the dish in the center of the oven and bake for about 5 to 10 minutes until the cheese is fully melted and gooey. Switch the oven to broil setting and let it cook for another 2 minutes, watching closely until the top is golden brown and bubbling, then serve immediately.

Notes

Ensure you squeeze the spinach very thoroughly; using a cheesecloth or heavy-duty paper towels works well if you don’t have a kitchen towel you want to dirty.
