Description

A quick and elegant seafood dinner featuring halibut, scallops, and shrimp baked in a garlic lemon butter sauce.

Ingredients

  • 2 tablespoons melted butter
  • 1/3 cup seafood stock or vegetable broth
  • 1 teaspoon minced garlic
  • 2 (4 ounce) halibut fillets
  • 1 tablespoon lemon juice
  • 6 peeled and deveined jumbo shrimp, tail still attached
  • 1/2 teaspoon seafood seasoning, such as Old Bay
  • 6 scallops
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat the oven to 450 degrees F (230 degrees C) and arrange the halibut, scallops, and shrimp in a single layer in a glass baking dish.
  2. Whisk together the seafood stock, melted butter, and lemon juice, then drizzle uniformly over the seafood.
  3. Sprinkle the minced garlic, seafood seasoning, salt, and pepper evenly across the dish to season.
  4. Bake in the preheated oven for 10 to 12 minutes until the halibut is opaque and flakes easily with a fork.
  5. Garnish with fresh chopped parsley immediately before serving.

Notes

Original recipe called for white wine, which has been substituted with seafood stock for a non-alcoholic version.
