Description

These cheesy pizza bites are ready in 30 minutes using a simple Greek yogurt dough. They make a perfect quick snack or fun appetizer that everyone devours.


Ingredients

  • 1 cup shredded mozzarella cheese
  • 1/2 cup fresh basil, chopped
  • 2 cups self-rising flour
  • 1/2 teaspoon garlic powder
  • 1/4 cup sliced black olives
  • 1 cup full fat Greek yogurt
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon Italian seasoning
  • Pizza sauce for dipping

Instructions

  1. Preheat your oven to 400°F to ensure it is nice and hot for baking. Generously coat a standard muffin tin with cooking spray so the bites release easily later.
  2. In a large mixing bowl, combine the self-rising flour and Greek yogurt. Use a sturdy spatula or spoon to mix them together until a shaggy dough forms, meaning it looks rough and uneven but holds together when pressed.
  3. Transfer the dough onto a flat surface and gently press it into a ball shape. It does not need to be smooth, so avoid overworking it. Use a knife or bench scraper to cut the dough into 36 to 48 small, bite-sized pieces.
  4. Place all the dough pieces into a large bowl and drizzle them with the olive oil. Toss everything together until the dough pieces are lightly coated, then sprinkle in the Italian seasoning, garlic powder, salt, and pepper.
  5. Add the shredded mozzarella cheese, chopped fresh basil, and sliced black olives to the bowl. Use your hands or a spoon to toss everything again, ensuring the cheese and toppings are distributed evenly among the dough pieces.
  6. Divide the mixture evenly into the prepared muffin tin cups, pressing down lightly if needed to fit it all in. Bake for about 15 minutes or until the cheese is bubbly and the tops are a beautiful golden brown color.

Notes

You can substitute the olives with chopped bell peppers or mushrooms if you prefer different toppings.
