Ingredients
- 2 tablespoons olive oil
- 3 pounds boneless, skinless chicken breasts
- 1 teaspoon dried oregano
- 2 tablespoons minced garlic
- 1/2 cup heavy cream
- 3/4 cup low-sodium chicken broth
- 1 cup sun-dried tomatoes, oil-packed
- 1/2 cup freshly grated parmesan cheese
- salt to taste
- freshly cracked black pepper to taste
- 1/2 teaspoon crushed red pepper flakes
- fresh basil for garnish
Instructions
- Prepare the chicken by pounding it to an even thickness or slicing into cutlets. Pat dry thoroughly with paper towels and season generously with salt and black pepper on both sides. Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear the chicken breasts in the hot oil for 3-4 minutes per side until they develop a golden crust. Remove the chicken from the pan and set aside on a plate; do not wipe out the skillet.
- Preheat your oven to 375°F. Reduce the stovetop heat to medium-low and add the minced garlic, sautéing for about 1 minute until fragrant. Deglaze the pan with chicken broth, scraping up any browned bits from the bottom.
- Remove the skillet from the heat briefly and whisk in the heavy cream and parmesan cheese until smooth. Return to heat and stir in the sun-dried tomatoes, oregano, and red pepper flakes. Simmer gently.
- Return the seared chicken to the skillet, coating it in the sauce. Transfer the skillet to the oven and bake for 12-16 minutes until the chicken reaches an internal temperature of 165°F.
- Remove from the oven and let rest for 5 minutes. Garnish with fresh chopped basil and serve warm with the extra sauce spooned over the top.

For a dairy-free version, use full-fat coconut milk instead of heavy cream and a plant-based parmesan alternative.
