Description
A rustic and comforting blackberry peach cobbler with a buttery batter that rises through the fruit as it bakes.
Ingredients
- 3 cups fresh peaches, peeled and sliced
- 1 cup all-purpose flour, sifted
- 1/2 cup milk
- 1/2 cup butter, softened
- 1 cup fresh blackberries
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 orange, juiced
- cinnamon sugar for topping
Instructions
- Preheat your oven to 350°F to ensure it is hot enough for the batter to rise properly.
- In a large bowl, cream the softened butter and granulated sugar together until the texture is light and fluffy.
- Add the flour, baking powder, and salt to the bowl, alternating with the milk, and mix until a smooth batter forms.
- Spread the batter evenly into the bottom of a greased 8×8-inch baking dish.
- Layer the sliced peaches and blackberries on top of the batter, then squeeze the orange juice over the fruit and sprinkle liberally with cinnamon sugar.
- Bake for 40 to 45 minutes until the crust is golden brown and the fruit juices are bubbling.
Notes
Do not stir the fruit into the batter; the batter will rise over the fruit during baking.
