Description

A rustic and comforting blackberry peach cobbler with a buttery batter that rises through the fruit as it bakes.


Ingredients

  • 3 cups fresh peaches, peeled and sliced
  • 1 cup all-purpose flour, sifted
  • 1/2 cup milk
  • 1/2 cup butter, softened
  • 1 cup fresh blackberries
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 orange, juiced
  • cinnamon sugar for topping

Instructions

  1. Preheat your oven to 350°F to ensure it is hot enough for the batter to rise properly.
  2. In a large bowl, cream the softened butter and granulated sugar together until the texture is light and fluffy.
  3. Add the flour, baking powder, and salt to the bowl, alternating with the milk, and mix until a smooth batter forms.
  4. Spread the batter evenly into the bottom of a greased 8×8-inch baking dish.
  5. Layer the sliced peaches and blackberries on top of the batter, then squeeze the orange juice over the fruit and sprinkle liberally with cinnamon sugar.
  6. Bake for 40 to 45 minutes until the crust is golden brown and the fruit juices are bubbling.

Notes

Do not stir the fruit into the batter; the batter will rise over the fruit during baking.
