Description

A savory, restaurant-style fried rice featuring tender chicken and a rich homemade garlic butter sauce, ready in just 20 minutes.


Ingredients

  • 4 cups cooked rice, cold (day-old is best)
  • 3/4 pound chicken breast, diced very small
  • 2 large eggs, beaten
  • 1 cup frozen mixed vegetables (peas and carrots)
  • 1/2 cup white onion, finely diced
  • 6 tablespoons butter, softened and divided
  • 3 cloves garlic, minced
  • 5 tablespoons soy sauce, divided
  • 1 tablespoon neutral oil (avocado or vegetable)
  • 1 1/2 teaspoons sesame oil
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. In a small bowl, mash together 5 tablespoons of softened butter, garlic powder, and minced garlic until well combined. Set this garlic butter aside.
  2. Heat the sesame oil and neutral oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook undisturbed for 1 minute to sear.
  3. Add 2 tablespoons of soy sauce, the remaining 1 tablespoon of plain butter, lemon juice, salt, and pepper to the chicken. Cook for 2-3 minutes until the chicken is browned and cooked through, then remove from the pan and set aside.
  4. Wipe out the skillet and add a splash more oil if needed. Sauté the onion and frozen vegetables for about 3 minutes until tender.
  5. Push the vegetables to one side of the pan. Pour the beaten eggs into the empty space and scramble until fully cooked.
  6. Add the cold rice and the prepared garlic butter mixture to the skillet. Stir-fry for 5 minutes, ensuring the rice is evenly coated and heated through.
  7. Stir in the remaining 3 tablespoons of soy sauce and cook for 1 more minute.
  8. Add the cooked chicken back into the pan and toss to combine. Season with additional salt and pepper if needed before serving.

Notes

For a gluten-free version, use Tamari instead of soy sauce. If you don’t have leftover rice, spread fresh hot rice on a baking sheet and freeze for 15 minutes to dry it out.
