Ingredients
- 4 medium boneless, skinless chicken breasts (approx 2 lbs)
- 1/2 cup heavy cream, room temperature
- 1/2 cup sun-dried tomatoes packed in oil
- 1 cup chicken broth
- 2 cloves garlic, minced
- 1/3 cup fresh parmesan, grated
- 2 tbsp cornstarch
- 1 tbsp oil from sun-dried tomato jar (optional)
- 1 tsp dried oregano
- 1/2 tsp salt (to taste)
- 1/4 tsp crushed red pepper flakes
- Freshly cracked black pepper to taste
- Fresh basil, chiffonaded for garnish
Instructions
- Place your chicken breasts on a board and season both sides generously with salt and pepper.
- In a bowl, whisk the chicken broth and cornstarch together until completely smooth and lump-free, then pour into the slow cooker.
- Add the heavy cream, minced garlic, oregano, red pepper flakes, sun-dried tomatoes, and optional tomato oil to the pot, whisking to combine.
- Lay the seasoned chicken breasts into the sauce mixture in a single layer.
- Cover and cook on High for 2.5 to 3 hours or Low for 6 to 7 hours, checking that the internal temperature reaches 160°F.
- Remove the chicken to a plate to rest.
- Whisk the sauce in the slow cooker vigorously, then stir in the grated parmesan until melted and smooth.
- Serve the chicken with the sauce ladled over it, garnished with fresh basil.
