Description

A vibrant and quick side dish featuring tender chickpeas tossed in a zesty homemade herb sauce and crumbled feta.


Ingredients

  • 3/4 cup feta cheese, crumbled
  • 1 cup homemade chimichurri sauce
  • 2 cans (15 oz each) chickpeas, rinsed and drained

Instructions

  1. Rinse the chickpeas thoroughly in a colander under cool water and allow them to drain completely to remove excess moisture.
  2. Prepare the chimichurri sauce by blending fresh herbs, oil, vinegar, and aromatics until a coarse sauce forms.
  3. Place the dry chickpeas in a medium bowl and pour the green sauce over them, tossing well to coat every bean.
  4. Add the crumbled feta cheese and gently fold it into the mixture.
  5. Serve immediately or refrigerate for up to 5 days to allow flavors to develop further.

Notes

For a vegan version, simply omit the feta cheese or use a plant-based alternative. Dried chickpeas can be used if soaked and cooked beforehand.
