Description
Tender sweet potatoes slow-cooked on the stovetop in a rich buttery syrup infused with warm spices and zesty orange.
Ingredients
- 1 stick unsalted butter
- 1 cup granulated sugar
- 3/4 cup packed dark brown sugar
- 4 tbsp frozen orange juice concentrate, thawed
- 2 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp fine salt
- 2 tbsp vanilla extract
- 2 lbs fresh sweet potatoes, peeled and sliced 1/2 inch thick
Instructions
- Scrub and peel the sweet potatoes, then slice them into rounds approximately 1/2 inch thick.
- In a large heavy-bottomed pot over medium-high heat, combine the sweet potato slices, butter, brown sugar, white sugar, orange juice concentrate, cinnamon, nutmeg, ginger, salt, and vanilla.
- Stir gently to coat the potatoes. Once the mixture is bubbling, cover the pot and reduce heat to low. Simmer for 55 minutes or until potatoes are tender.
- Uncover the pot and increase heat to medium. Let the liquid boil gently for about 12 minutes to reduce into a thick syrup, stirring occasionally to coat the yams.
Notes
For a thicker glaze, remove the yams with a slotted spoon after cooking and reduce the syrup on high heat for an extra 2-3 minutes before pouring back over.
