Description

Tender, buttery scones studded with fresh apple pieces and topped with a golden streusel coating.


Ingredients

Scone Base:

  • 2¼ cups all-purpose flour
  • 2½ teaspoons baking powder
  • ¾ teaspoon salt
  • 1¼ teaspoons ground cinnamon
  • ⅓ cup packed light brown sugar
  • ½ cup cold unsalted butter, cubed
  • ⅔ cup cold buttermilk
  • 1 large egg
  • 1 medium apple, peeled and diced small

Streusel Topping:

  • 3 tablespoons melted butter
  • ⅓ cup all-purpose flour
  • ⅓ cup packed brown sugar
  • Pinch of cinnamon

Optional Glaze:

  • 1 cup powdered sugar
  • 3 tablespoons heavy cream or milk
  • 1 teaspoon fresh lemon juice

Instructions

  1. Preheat oven to 400°F. Line baking sheet with parchment paper.
  2. Whisk together flour, baking powder, salt, cinnamon, and brown sugar.
  3. Cut in cold butter until mixture resembles coarse crumbs.
  4. Combine buttermilk and egg in small bowl.
  5. Add wet ingredients and diced apple to flour mixture. Mix gently until just combined.
  6. Pat dough into 8-inch circle on prepared baking sheet.
  7. Mix streusel ingredients and sprinkle over dough.
  8. Cut into 8 wedges. Chill 15 minutes.
  9. Separate wedges and bake 22-25 minutes until golden.
  10. Cool 10 minutes before glazing if desired.

Notes

Keep ingredients cold for flakiest texture. Don’t overmix dough. Store covered for up to 1 week or freeze for 3 months.
