Description

A spiced bundt cake filled with fresh apple pieces and topped with brown sugar glaze.


Ingredients

For the Cake:

  • 3¼ cups all-purpose flour (390g)
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¾ teaspoon salt
  • 2 cups granulated sugar (400g)
  • 1⅓ cups vegetable oil
  • 3 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 3½ cups peeled and diced apples
  • ¾ cup chopped walnuts (optional)

For the Glaze:

  • 6 tablespoons unsalted butter
  • ⅔ cup packed light brown sugar
  • 3 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F. Coat a 12-cup bundt pan thoroughly with butter or non-stick spray.
  2. Whisk together flour, baking soda, cinnamon, nutmeg, and salt in a large bowl.
  3. In another bowl, whisk sugar, oil, eggs, and vanilla until smooth.
  4. Add wet ingredients to dry ingredients, stirring until just combined.
  5. Fold in apples and walnuts gently.
  6. Pour batter into prepared pan and bake 65-70 minutes.
  7. Cool in pan 20 minutes, then turn out onto wire rack.
  8. For glaze: melt butter, add brown sugar and cream, simmer 2-3 minutes. Stir in vanilla and salt.
  9. Drizzle cooled glaze over completely cooled cake.

Notes

  • Avoid overmixing the batter to keep cake light
