Description
A spiced bundt cake filled with fresh apple pieces and topped with brown sugar glaze.
Ingredients
For the Cake:
- 3¼ cups all-purpose flour (390g)
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ¾ teaspoon salt
- 2 cups granulated sugar (400g)
- 1⅓ cups vegetable oil
- 3 large eggs, room temperature
- 2 teaspoons vanilla extract
- 3½ cups peeled and diced apples
- ¾ cup chopped walnuts (optional)
For the Glaze:
- 6 tablespoons unsalted butter
- ⅔ cup packed light brown sugar
- 3 tablespoons heavy cream
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F. Coat a 12-cup bundt pan thoroughly with butter or non-stick spray.
- Whisk together flour, baking soda, cinnamon, nutmeg, and salt in a large bowl.
- In another bowl, whisk sugar, oil, eggs, and vanilla until smooth.
- Add wet ingredients to dry ingredients, stirring until just combined.
- Fold in apples and walnuts gently.
- Pour batter into prepared pan and bake 65-70 minutes.
- Cool in pan 20 minutes, then turn out onto wire rack.
- For glaze: melt butter, add brown sugar and cream, simmer 2-3 minutes. Stir in vanilla and salt.
- Drizzle cooled glaze over completely cooled cake.
Notes
- Avoid overmixing the batter to keep cake light
- Proper pan preparation prevents sticking
