Description
Tender custard-like squares filled with paper-thin apple slices that melt in your mouth.
Ingredients
- 3 medium sweet apples (Gala or Honeycrisp), peeled
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 2 large eggs, room temperature
- 1/3 cup granulated sugar
- Pinch of fine sea salt
- 2 teaspoons vanilla extract
- 6 tablespoons whole milk, room temperature
- 2 tablespoons unsalted butter, melted and cooled
- Powdered sugar for dusting (optional)
Instructions
- Preheat oven to 400°F. Butter an 8-inch square baking pan.
- Slice apples paper-thin (about 1/16 inch thick), discarding cores.
- Whisk flour and baking powder in a small bowl.
- In a large bowl, whisk eggs, sugar, and salt for 2 minutes until pale. Add vanilla, milk, and melted butter.
- Fold flour mixture into wet ingredients until just combined.
- Gently fold in apple slices until each piece is coated with batter.
- Pour into prepared pan and smooth top.
- Bake 45-55 minutes until golden and puffed throughout. Test with a knife in center.
- Cool 20 minutes before cutting into squares. Dust with powdered sugar if desired.
Notes
- Room temperature ingredients mix more easily
- Don’t rush the cooling time, the custard needs to set
- Squares keep covered at room temperature for 3 days
