My Cozy Custardy Apple Squares

Description

Tender custard-like squares filled with paper-thin apple slices that melt in your mouth.


Ingredients

  • 3 medium sweet apples (Gala or Honeycrisp), peeled
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 large eggs, room temperature
  • 1/3 cup granulated sugar
  • Pinch of fine sea salt
  • 2 teaspoons vanilla extract
  • 6 tablespoons whole milk, room temperature
  • 2 tablespoons unsalted butter, melted and cooled
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 400°F. Butter an 8-inch square baking pan.
  2. Slice apples paper-thin (about 1/16 inch thick), discarding cores.
  3. Whisk flour and baking powder in a small bowl.
  4. In a large bowl, whisk eggs, sugar, and salt for 2 minutes until pale. Add vanilla, milk, and melted butter.
  5. Fold flour mixture into wet ingredients until just combined.
  6. Gently fold in apple slices until each piece is coated with batter.
  7. Pour into prepared pan and smooth top.
  8. Bake 45-55 minutes until golden and puffed throughout. Test with a knife in center.
  9. Cool 20 minutes before cutting into squares. Dust with powdered sugar if desired.

Notes

  • Room temperature ingredients mix more easily
  • Don’t rush the cooling time, the custard needs to set
  • Squares keep covered at room temperature for 3 days
