Description

A warm and creamy spinach artichoke dip made in one skillet. Perfect for parties and game days.


Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 poblano pepper, chopped (or red bell pepper for mild)
  • 8 oz cream cheese, cut into blocks
  • 1/2 cup sour cream
  • 1 cup green onions, chopped (white and green parts)
  • 1/2 tsp red pepper flakes (optional)
  • 8 oz frozen spinach, thawed and squeezed dry
  • 1/2 cup artichoke hearts, chopped
  • 1/4 tsp salt
  • Black pepper to taste

Instructions

  1. Thaw the frozen spinach completely and place it in a fine mesh sieve or clean towel. Squeeze firmly to remove as much excess water as possible to ensure a creamy result.
  2. Heat the olive oil in a skillet over medium heat. Add the chopped green onions, poblano pepper, red pepper flakes, and salt. Sauté for 8 to 10 minutes until the onions are golden and the peppers are tender.
  3. Reduce the heat slightly and add the dry spinach, cream cheese, sour cream, and chopped artichokes to the pan. Stir constantly until the cheeses melt and everything is well combined.
  4. Cook for another 2 to 4 minutes until the dip is hot and steaming. Season with black pepper and additional salt if needed before serving warm.

Notes

Serve with tortilla chips, pita bread, or veggies. For a milder dip, use bell pepper instead of poblano.
