Description
A warm and creamy spinach artichoke dip made in one skillet. Perfect for parties and game days.
Ingredients
- 1 tbsp extra virgin olive oil
- 1 poblano pepper, chopped (or red bell pepper for mild)
- 8 oz cream cheese, cut into blocks
- 1/2 cup sour cream
- 1 cup green onions, chopped (white and green parts)
- 1/2 tsp red pepper flakes (optional)
- 8 oz frozen spinach, thawed and squeezed dry
- 1/2 cup artichoke hearts, chopped
- 1/4 tsp salt
- Black pepper to taste
Instructions
- Thaw the frozen spinach completely and place it in a fine mesh sieve or clean towel. Squeeze firmly to remove as much excess water as possible to ensure a creamy result.
- Heat the olive oil in a skillet over medium heat. Add the chopped green onions, poblano pepper, red pepper flakes, and salt. Sauté for 8 to 10 minutes until the onions are golden and the peppers are tender.
- Reduce the heat slightly and add the dry spinach, cream cheese, sour cream, and chopped artichokes to the pan. Stir constantly until the cheeses melt and everything is well combined.
- Cook for another 2 to 4 minutes until the dip is hot and steaming. Season with black pepper and additional salt if needed before serving warm.
Notes
Serve with tortilla chips, pita bread, or veggies. For a milder dip, use bell pepper instead of poblano.
