Ingredients

  • 1 cup creamy peanut butter (approx. 255g)
  • 1/2 cup unsalted butter, room temperature (115g)
  • 1/2 cup granulated sugar (105g)
  • 1/2 cup brown sugar, packed (95g)
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour (185g)
  • 3/4 tsp baking powder
  • 1/4 tsp salt (optional, if PB is unsalted)

Instructions

  1. Preheat your oven to 350°F (175°C). Sift the flour and baking powder together in a bowl and whisk to combine.
  2. In a stand mixer, cream the butter, granulated sugar, and brown sugar until light and fluffy. Add the peanut butter and mix until smooth.
  3. Mix in the egg and vanilla extract until fully combined, scraping down the bowl as needed.
  4. Add the flour mixture to the wet ingredients and mix on low speed until just incorporated.
  5. Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet.
  6. Flatten each ball with a fork in a crisscross pattern.
  7. Bake for 8-10 minutes until edges are just golden. Let cool completely on the baking sheet to set.

Notes

Ensure you do not overbake; cookies should look slightly soft when removed from the oven. Store in an airtight container for up to a week.
