Ingredients
- 1 cup creamy peanut butter (approx. 255g)
- 1/2 cup unsalted butter, room temperature (115g)
- 1/2 cup granulated sugar (105g)
- 1/2 cup brown sugar, packed (95g)
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour (185g)
- 3/4 tsp baking powder
- 1/4 tsp salt (optional, if PB is unsalted)
Instructions
- Preheat your oven to 350°F (175°C). Sift the flour and baking powder together in a bowl and whisk to combine.
- In a stand mixer, cream the butter, granulated sugar, and brown sugar until light and fluffy. Add the peanut butter and mix until smooth.
- Mix in the egg and vanilla extract until fully combined, scraping down the bowl as needed.
- Add the flour mixture to the wet ingredients and mix on low speed until just incorporated.
- Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet.
- Flatten each ball with a fork in a crisscross pattern.
- Bake for 8-10 minutes until edges are just golden. Let cool completely on the baking sheet to set.
