Description

A creamy, nostalgic fudge recipe featuring the classic combination of bright orange citrus and sweet vanilla white chocolate.


Ingredients

  • 2/3 cup (168 g) evaporated milk
  • 3 cups (600 g) granulated sugar
  • 3 drops orange gel food coloring
  • 1 package (12 ounces) white chocolate chips
  • 3 teaspoons orange extract
  • 3/4 cup (170 g) butter
  • 1 jar (7 ounces) marshmallow fluff

Instructions

  1. Line a 9×13-inch baking dish with parchment paper, ensuring there is enough overhang to lift the fudge out later.
  2. Combine sugar, butter, and evaporated milk in a large saucepan over medium heat. Bring to a boil while stirring.
  3. Cook the mixture, stirring constantly, until it reaches 234°F on a candy thermometer (approximately 5 minutes). Remove from heat immediately.
  4. Stir in the white chocolate chips until fully melted and smooth, then beat in the marshmallow fluff until combined.
  5. Reserve 1 cup of the white mixture and set it aside. Add the orange extract and food coloring to the remaining mixture in the pot and stir well.
  6. Pour the orange mixture into the prepared pan. Quickly drop spoonfuls of the reserved white mixture on top and swirl with a knife.
  7. Allow the fudge to cool and set at room temperature for at least 2 hours before cutting into squares.

Notes

Work quickly once the white chocolate is added, as the fudge begins to set rapidly. If you do not have a candy thermometer, use the cold water test: drop a small amount of syrup into cold water; if it forms a soft, flexible ball, it is ready.
