Description

A creamy, one-pan gnocchi dish featuring sun-dried tomatoes and crispy beef bacon in a rich parmesan sauce.


Ingredients

  • 16 ounce package potato gnocchi
  • 1/3 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 pound beef bacon, chopped
  • 1/2 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/2 teaspoon Italian seasoning
  • 1 pinch red pepper flakes

Instructions

  1. Place chopped beef bacon in a cold skillet and cook over medium heat for 6-8 minutes until crispy. Remove meat, leaving fat in the pan.
  2. Add gnocchi to the hot fat and cook undisturbed for 4-5 minutes until browned. Add garlic and sauté for 30 seconds.
  3. Stir in chicken broth and heavy cream, scraping up browned bits. Mix in Parmesan until melted and smooth.
  4. Return bacon to the pan with sun-dried tomatoes, Italian seasoning, and red pepper flakes. Toss to coat and heat through.

Notes

Traditional recipes use pork bacon, but I use beef bacon for a rich, smoky flavor. Turkey bacon also works well.
