Description
A creamy, one-pan gnocchi dish featuring sun-dried tomatoes and crispy beef bacon in a rich parmesan sauce.
Ingredients
- 16 ounce package potato gnocchi
- 1/3 cup heavy cream
- 1/2 cup chicken broth
- 1/2 pound beef bacon, chopped
- 1/2 cup freshly grated Parmesan cheese
- 4 cloves garlic, minced
- 1/4 cup sun-dried tomatoes, chopped
- 1/2 teaspoon Italian seasoning
- 1 pinch red pepper flakes
Instructions
- Place chopped beef bacon in a cold skillet and cook over medium heat for 6-8 minutes until crispy. Remove meat, leaving fat in the pan.
- Add gnocchi to the hot fat and cook undisturbed for 4-5 minutes until browned. Add garlic and sauté for 30 seconds.
- Stir in chicken broth and heavy cream, scraping up browned bits. Mix in Parmesan until melted and smooth.
- Return bacon to the pan with sun-dried tomatoes, Italian seasoning, and red pepper flakes. Toss to coat and heat through.
Notes
Traditional recipes use pork bacon, but I use beef bacon for a rich, smoky flavor. Turkey bacon also works well.
