A creamy, savory one-pot pasta dish featuring caramelized onions, rich beef broth, and melted Gruyere cheese, mimicking the classic soup flavors.
Ingredients
- 4 large yellow onions, thinly sliced
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 tablespoon fresh thyme leaves
- 1 teaspoon apple cider vinegar
- 4 cups beef broth
- 1 cup water
- 1 teaspoon Worcestershire sauce
- 12 oz short pasta (fusilli or penne)
- 1/2 cup heavy cream
- 1 cup Gruyere cheese, freshly grated
- 1/2 cup Parmesan cheese, grated
- Salt and black pepper to taste
Instructions
- In a large Dutch oven, heat butter and olive oil over medium heat. Add sliced onions and a pinch of salt. Cook for 25 minutes, stirring often, until deep golden brown.
- Add garlic and thyme, cooking for 1 minute. Deglaze the pan with apple cider vinegar, scraping up browned bits.
- Pour in beef broth, water, Worcestershire sauce, and pasta. Bring to a boil, then simmer for 10-12 minutes until pasta is al dente and liquid is mostly absorbed.
- Lower heat and stir in heavy cream. Remove from heat and fold in Gruyere and Parmesan until melted and creamy. Season with pepper.
Notes
For a vegetarian version, substitute vegetable broth for beef broth. If you don’t have Gruyere, Swiss cheese or mozzarella are good alternatives.
