Description
Soft, cake-like eggnog cookies topped with a rich spiced buttercream frosting. A perfect holiday treat that melts in your mouth.
Ingredients
- 2 cups (285g) all-purpose flour
- 3/4 cup (170g) unsalted butter, softened
- 1/2 cup (100g) granulated sugar
- 1/2 cup (100g) light brown sugar, packed
- 2 large egg yolks
- 1/2 cup eggnog (full fat recommended)
- 2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 tsp rum extract
- For the Frosting:
- 3 cups (360g) powdered sugar
- 1/2 cup (113g) butter, softened
- 3–4 Tbsp eggnog
- 1/2 tsp rum extract
- Nutmeg for garnish
Instructions
- Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper or silicone baking mats.
- In a medium mixing bowl, whisk together the flour, baking powder, salt, nutmeg, and cinnamon until well combined.
- Using a stand mixer or hand mixer, cream the butter, granulated sugar, and brown sugar together until the mixture is pale and fluffy.
- Add the egg yolks one at a time, mixing well after each. Pour in the vanilla extract, rum extract, and eggnog, blending until combined.
- Reduce the mixer speed to low and gradually add the dry ingredients. Mix just until the dough comes together; avoid overmixing.
- Drop heaping tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes. The cookies should be set on the edges but still soft in the center. Allow them to cool on the baking sheet for 5 minutes before moving to a wire rack.
- To make the frosting, whip the butter until fluffy. Add the powdered sugar, rum extract, and 3 tablespoons of eggnog. Beat until smooth, adding more eggnog if necessary to reach desired consistency.
- Spread the frosting over the completely cooled cookies and sprinkle lightly with additional nutmeg.
Notes
Store cookies in an airtight container in the refrigerator for up to 4 days. Bring to room temperature before serving for the best texture.
