Description

Soft, cake-like eggnog cookies topped with a rich spiced buttercream frosting. A perfect holiday treat that melts in your mouth.


Ingredients

  • 2 cups (285g) all-purpose flour
  • 3/4 cup (170g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) light brown sugar, packed
  • 2 large egg yolks
  • 1/2 cup eggnog (full fat recommended)
  • 2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 tsp rum extract
  • For the Frosting:
  • 3 cups (360g) powdered sugar
  • 1/2 cup (113g) butter, softened
  • 34 Tbsp eggnog
  • 1/2 tsp rum extract
  • Nutmeg for garnish

Instructions

  1. Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper or silicone baking mats.
  2. In a medium mixing bowl, whisk together the flour, baking powder, salt, nutmeg, and cinnamon until well combined.
  3. Using a stand mixer or hand mixer, cream the butter, granulated sugar, and brown sugar together until the mixture is pale and fluffy.
  4. Add the egg yolks one at a time, mixing well after each. Pour in the vanilla extract, rum extract, and eggnog, blending until combined.
  5. Reduce the mixer speed to low and gradually add the dry ingredients. Mix just until the dough comes together; avoid overmixing.
  6. Drop heaping tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes. The cookies should be set on the edges but still soft in the center. Allow them to cool on the baking sheet for 5 minutes before moving to a wire rack.
  8. To make the frosting, whip the butter until fluffy. Add the powdered sugar, rum extract, and 3 tablespoons of eggnog. Beat until smooth, adding more eggnog if necessary to reach desired consistency.
  9. Spread the frosting over the completely cooled cookies and sprinkle lightly with additional nutmeg.

Notes

Store cookies in an airtight container in the refrigerator for up to 4 days. Bring to room temperature before serving for the best texture.
