Description

Crisp English cucumber rounds topped with a zesty, creamy whipped feta and fresh dill spread. An easy, refreshing appetizer ready in minutes.


Ingredients

  • 2 large English cucumbers, sliced into 1/2 inch rounds
  • 1/4 cup extra virgin olive oil
  • 8 oz block feta cheese, crumbled
  • 1 tbsp honey
  • 1/2 lemon, juiced and zested
  • 1/4 tsp freshly cracked black pepper
  • 2 sprigs fresh dill, plus extra for garnish

Instructions

  1. Combine the crumbled feta cheese, lemon juice, lemon zest, honey, fresh dill, and black pepper in the bowl of a food processor. Pulse several times to break down the cheese.
  2. While the processor is running, slowly pour the olive oil in a steady stream. Continue blending for 1-2 minutes until the mixture is light, fluffy, and completely smooth.
  3. Slice the English cucumbers into rounds about 1/2 inch thick. Arrange them on a platter.
  4. Spoon or pipe a dollop of the whipped feta mixture onto each cucumber slice. Top with a small piece of fresh dill and serve immediately.

Notes

Ensure ingredients like the cucumber are chilled before assembly for the best texture. You can make the whipped feta up to 2 days in advance and store it in the fridge.
