Ingredients

  • 1½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold and diced
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • ¼ cup sugar
  • 1 tablespoon cornstarch

Instructions

  • Preheat oven to 375°F and line 8×8 pan with parchment.
  • Mix dry ingredients, cut in butter until crumbly, add egg and vanilla.
  • Press half the mixture into pan.
  • Toss strawberries with remaining ingredients, spoon over crust.
  • Sprinkle remaining crumble on top.
  • Bake 35-45 minutes until golden brown.
  • Cool completely before cutting.

Notes

For the best texture, refrigerate bars for at least 1 hour after cooling to room temperature. Serve at room temperature for maximum flavor.
