Description

Crispy, cheesy, and packed with veggies, these easy zucchini fritters are the perfect summer appetizer or side dish.


Ingredients

  • 2 large eggs
  • 1/2 cup grated parmesan cheese
  • 1 lb zucchini (about 3 medium)
  • 3/4 cup all-purpose flour
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp ground black pepper
  • 1 tsp kosher salt
  • 2 tbsp avocado oil for frying
  • Ranch dressing for serving

Instructions

  1. Grate the zucchini using a box grater and place it into a clean kitchen towel. Sprinkle the salt over the zucchini and let it rest for 10 minutes to release moisture.
  2. Twist the towel tightly over a sink to squeeze out as much liquid as possible from the zucchini. The dryer the zucchini, the crispier the fritters will be.
  3. Place the drained zucchini into a large bowl. Add the eggs, flour, parmesan cheese, garlic powder, onion powder, and black pepper. Mix well with a fork until the batter holds together.
  4. Heat the avocado oil in a large skillet over medium heat. Drop about 3 tablespoons of batter per fritter into the pan and flatten slightly with a spatula.
  5. Fry for 2-3 minutes on each side until they are golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil before serving.

Notes

Ensure you squeeze the zucchini very thoroughly; excess water is the enemy of crispiness.
