Description

Sweet and savory stuffed dates with four distinct filling variations including goat cheese, ricotta, and peanut butter.


Ingredients

  • 22 large Medjool dates
  • 3 tbsp creamy peanut butter
  • 1 tbsp dark chocolate, roughly chopped
  • 1/2 tsp cinnamon
  • 2 tbsp goat cheese
  • 1 tbsp pistachios, crushed
  • 1 tbsp honey
  • 2 tbsp ricotta cheese
  • 5 whole raw almonds
  • 1 tbsp shredded coconut
  • 3 tbsp cashew butter
  • 1 tbsp cacao nibs
  • 1/2 tsp cardamom

Instructions

  1. Slice the dates lengthwise carefully using a small paring knife, ensuring you do not cut all the way through the bottom skin. Remove and discard the pits.
  2. Prepare the fillings in separate small bowls. Mix the goat cheese with honey and pistachios; combine the cashew butter with cardamom; mix the peanut butter with cinnamon; keep the ricotta plain.
  3. Spoon the respective filling mixtures into the cavity of each date using a teaspoon.
  4. Top each date with its specific garnish: almonds and coconut for the ricotta dates, dark chocolate for the peanut butter dates, pistachios for the goat cheese dates, and cacao nibs for the cashew butter dates.
  5. Serve immediately or chill in the refrigerator to set firmly.

Notes

Store leftover dates in an airtight container in the refrigerator for up to 5 days. They can also be frozen for up to 3 months.
