Description
Soft and chewy homemade oatmeal cookies sandwiched with a fluffy, creamy vanilla filling. A nostalgic treat that is far better than the store-bought version.
Ingredients
- 1/2 cup granulated sugar
- 2 Tbsp molasses
- 1 tsp ground cinnamon
- 3/4 tsp baking soda
- 1 large egg
- 2 1/4 cups powdered sugar
- 1/2 tsp salt
- 1 large egg yolk
- 2 1/4 cups rolled oats (not quick oats)
- 2 oz cream cheese, softened
- 8 Tbsp unsalted butter (for filling), room temperature
- 1/3 cup light brown sugar, packed
- 1/4 tsp ground nutmeg
- 1 tsp vanilla extract (for cookies)
- 1 cup unsalted butter (for cookies), room temperature
- 1/4 tsp ground ginger
- 1 3/4 cups all-purpose flour
- 1 tsp vanilla extract (for filling)
Instructions
- Preheat your oven to 350 degrees F and line two large baking sheets with parchment paper.
- In a bowl, whisk together the rolled oats, flour, baking soda, salt, cinnamon, nutmeg, and ginger until well combined.
- In a large bowl or stand mixer, cream the 1 cup of butter with the granulated sugar and brown sugar until pale and fluffy.
- Mix in the molasses, followed by the whole egg, egg yolk, and vanilla extract until smooth.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
- Scoop 1 1/2 tablespoon mounds of dough onto the baking sheets, spacing them apart, and flatten slightly.
- Bake for roughly 10 minutes, or until edges are set but centers remain soft.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- For the filling, beat the 8 tablespoons of butter with the cream cheese until smooth.
- Add powdered sugar and vanilla to the filling mixture and whip on high speed until fluffy.
- Spread filling onto the flat side of half the cookies and top with the remaining cookies to form sandwiches.
Notes
Store in an airtight container in the refrigerator for best texture. Let sit at room temperature for 10 minutes before serving if preferred.
