Description

Ingredients

  • 1 pound fettuccine pasta
  • 1 cup heavy whipping cream
  • 16 ounces fresh mushrooms, sliced (cremini or button)
  • 1/2 cup salted butter, divided
  • 2 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup reserved pasta water
  • 1 teaspoon salt (plus more to taste)
  • Fresh ground black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Begin by melting 2 tablespoons of butter in a large skillet over medium-high heat. Add the sliced mushrooms and minced garlic, sautéing them for 12 to 15 minutes until they are deeply golden brown and tender.
  2. Reduce the heat to low and pour in the heavy whipping cream along with the remaining butter. Allow the sauce to simmer gently, letting the butter melt and the flavors combine, while you prepare the pasta.
  3. Bring a large pot of salted water to a boil and cook the fettuccine according to the package instructions until al dente. Just before draining, carefully scoop out and reserve 1 cup of the starchy pasta cooking water.
  4. Transfer the drained hot pasta directly into the skillet with the mushroom sauce. Use tongs to toss the noodles, gradually adding the Parmesan cheese and splashes of the reserved pasta water until the sauce is creamy and coats the pasta evenly.

Notes

For an extra touch of luxury, drizzle a small amount of truffle oil over the finished dish just before serving. If you don’t have fettuccine, linguine or tagliatelle work equally well.
