Description

A creamy, romantic chicken dish featuring sun-dried tomatoes and herbs served over pasta. Perfect for a special dinner or cozy weeknight meal.


Ingredients

  • 1 (16 ounce) package angel hair pasta
  • 1/2 pound beef bacon
  • 1/4 cup chopped sun-dried tomatoes
  • 1 1/2 pounds skinless, boneless chicken breast halves
  • 1/4 cup whipping cream
  • 3 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1 pinch red pepper flakes
  • 2 tablespoons butter
  • 1/2 cup freshly shaved Parmesan cheese
  • 1/4 teaspoon ground thyme
  • 1/2 cup chicken broth, divided
  • 1 tablespoon all-purpose flour
  • salt to taste

Instructions

  1. Place your chicken breasts on a clean and flat cutting board. carefully slice horizontally through the middle of each breast, but do not cut all the way through to the other side. Open the two sides and spread them out flat like an open book to butterfly them.
  2. Melt the butter in a large skillet that is safe for oven use over medium-high heat. Add the minced garlic, dried oregano, and ground thyme to the melted butter. Sauté these ingredients while stirring constantly until they become fragrant, which usually takes about 30 seconds.
  3. Place the butterflied chicken breasts into the hot skillet. Cook them until they turn a nice golden brown color on the outside, which takes about 3 to 4 minutes per side. Note that the chicken will not be fully cooked through at this stage.
  4. Pour a small portion of the chicken broth into the skillet around the chicken. Transfer the entire skillet into your preheated oven and bake until the chicken is no longer pink in the center and the juices run clear. This baking process ensures the meat stays juicy and tender.
  5. While the chicken bakes, place the beef bacon strips in a separate large skillet over medium-high heat. Cook the strips, turning them occasionally, until they are evenly browned and crispy. Remove the beef bacon from the pan, drain on paper towels, and chop it into bite-sized pieces once cool enough to handle.
  6. Fill a large pot with lightly salted water and bring it to a rolling boil. Add the angel hair pasta and cook it while stirring occasionally until it is tender but still firm to the bite. Drain the water from the pasta and keep it warm until you are ready to assemble the dish.
  7. Remove the skillet from the oven and transfer the cooked chicken to a plate to rest, but keep the juices in the pan. Place the skillet back on the stovetop over medium heat and whisk in the flour. Pour in the remaining chicken broth, parmesan cheese, and whipping cream, whisking constantly until the mixture is smooth and combined.
  8. Stir in the chopped sun-dried tomatoes, red pepper flakes, and salt to taste. Add the chopped beef bacon and the cooked chicken back into the skillet with the sauce. Serve the saucy chicken immediately over the hot cooked pasta.

Notes

I used beef bacon in this recipe as a substitute for traditional pork bacon. You can also use turkey bacon if preferred.
