Description

Fluffy, protein-packed pancakes made with Greek yogurt for a tender crumb and crisp edges. A quick and easy breakfast favorite.


Ingredients

  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 2 large eggs
  • 5.5 oz vanilla Greek yogurt
  • 4 tbsp milk (plus more if needed)
  • Coconut oil (for cooking)

Instructions

  1. In a mixing bowl, whisk together the eggs, Greek yogurt, and milk until the mixture is smooth and uniform in color.
  2. Add the baking powder to the flour, then gently fold the dry ingredients into the wet mixture until just combined, leaving some small lumps.
  3. Heat coconut oil in a non-stick skillet over medium heat until shimmering.
  4. Spoon heaping tablespoons of batter into the hot pan and cook for about 2-3 minutes per side until golden brown and cooked through.

Notes

If the batter is too thick, add milk one teaspoon at a time until it reaches your desired consistency. Avoid overmixing to keep them fluffy.
