Description
A restaurant-quality filet mignon recipe featuring a perfect pan-sear and a rich homemade blue cheese butter topping.
Ingredients
- 2 to 3 tablespoons unsalted butter (for searing)
- 4 filet mignon steaks, about 2 inches thick
- kosher salt
- fresh ground pepper
- 6 tablespoons unsalted butter (for topping)
- 1/3 cup crumbled blue cheese
- 2 tablespoons chopped herbs (parsley, thyme, basil, or chives)
- cacio e pepe brussels sprouts (for serving)
Instructions
- Preheat the oven to 450 degrees F. Set a cast iron skillet over medium-high heat. Be sure to use an oven vent or fan as it may get smoky.
- Season the filet mignon steaks generously on all sides with kosher salt and fresh ground pepper.
- Add 2 tablespoons of butter to the hot skillet. When it begins to brown and smoke slightly, place the steaks in the pan.
- Sear the steaks for about 2 minutes per side until they develop a deep golden brown crust. Add the remaining tablespoon of searing butter if the pan gets too dry.
- Turn off the burner and transfer the skillet to the preheated oven. Cook for 3 to 5 minutes depending on preference (125-130°F for medium-rare, 135-140°F for medium).
- Remove steaks from the pan and let them rest for 5 to 10 minutes. Top with a scoop of blue cheese butter about 2 minutes before serving so it melts slightly.
- For the butter: Mash 6 tablespoons unsalted butter, crumbled blue cheese, and herbs together in a bowl until creamy.
Notes
You can prepare the blue cheese butter in advance and store it in the refrigerator for up to 3 days. Bring it to room temperature slightly before serving for easier melting.
