Best Filet Mignon with Blue Cheese Butter

Description

A restaurant-quality filet mignon recipe featuring a perfect pan-sear and a rich homemade blue cheese butter topping.


Ingredients

  • 2 to 3 tablespoons unsalted butter (for searing)
  • 4 filet mignon steaks, about 2 inches thick
  • kosher salt
  • fresh ground pepper
  • 6 tablespoons unsalted butter (for topping)
  • 1/3 cup crumbled blue cheese
  • 2 tablespoons chopped herbs (parsley, thyme, basil, or chives)
  • cacio e pepe brussels sprouts (for serving)

Instructions

  1. Preheat the oven to 450 degrees F. Set a cast iron skillet over medium-high heat. Be sure to use an oven vent or fan as it may get smoky.
  2. Season the filet mignon steaks generously on all sides with kosher salt and fresh ground pepper.
  3. Add 2 tablespoons of butter to the hot skillet. When it begins to brown and smoke slightly, place the steaks in the pan.
  4. Sear the steaks for about 2 minutes per side until they develop a deep golden brown crust. Add the remaining tablespoon of searing butter if the pan gets too dry.
  5. Turn off the burner and transfer the skillet to the preheated oven. Cook for 3 to 5 minutes depending on preference (125-130°F for medium-rare, 135-140°F for medium).
  6. Remove steaks from the pan and let them rest for 5 to 10 minutes. Top with a scoop of blue cheese butter about 2 minutes before serving so it melts slightly.
  7. For the butter: Mash 6 tablespoons unsalted butter, crumbled blue cheese, and herbs together in a bowl until creamy.

Notes

You can prepare the blue cheese butter in advance and store it in the refrigerator for up to 3 days. Bring it to room temperature slightly before serving for easier melting.
