Sweet, savory grilled peaches wrapped in crispy prosciutto, served over peppery arugula with creamy goat cheese, the perfect summer dish.
Ingredients
- 3 large ripe peaches, cut into wedges
- 6 thin slices prosciutto, halved
- 8 ounces baby arugula
- 2 tablespoons fresh lemon juice
- 1 tablespoon extra virgin olive oil
- 4 ounces goat cheese, crumbled
- 3 tablespoons roasted pepitas
- 2 tablespoons balsamic glaze
- Salt and pepper to taste
Instructions
- Preheat grill to medium heat (375°F).
- Cut peaches into thick wedges and wrap each with half a slice of prosciutto.
- Grill wrapped peaches for 10-12 minutes, turning every 2-3 minutes until prosciutto is crispy.
- Toss arugula with lemon juice, olive oil, salt, and pepper.
- Arrange arugula on platter, top with grilled peaches, goat cheese, and pepitas.
- Drizzle with balsamic glaze and serve immediately.
Notes
- Choose firm but ripe peaches for best grilling results
- Don’t wrap prosciutto too tightly – it will shrink as it cooks
- Serve immediately while peaches are still warm for best contrast
