Georgia Peach Ice Cream Sandwich Soft, chewy sugar cookies filled with creamy peach ice cream create the perfect frozen treat.
Ingredients
Sugar Cookies:
- 3/4 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1/4 cup clear corn syrup
- 1 large egg, room temperature
- 2 teaspoons pure vanilla extract
- 2 1/2 cups all-purpose flour, sifted
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Assembly:
- 1 gallon quality peach ice cream
Instructions
- Preheat oven to 375°F. Line two baking sheets with parchment paper.
- Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
- Cream butter, both sugars, and corn syrup with electric mixer until fluffy (3-4 minutes).
- Beat in egg and vanilla until combined.
- Gradually mix in dry ingredients until just combined.
- Using 1 1/2-inch cookie scoop, portion dough into balls 2 inches apart on baking sheets.
- Press each ball to 1/4-inch thickness with glass bottom.
- Bake 10-12 minutes until edges are set and lightly golden.
- Cool completely on baking sheets.
- Soften ice cream slightly. Place baking sheet in freezer.
- Scoop ice cream onto flat side of one cookie, top with another cookie.
- Place on chilled baking sheet and freeze immediately.
- Repeat with remaining cookies. Freeze 2 hours before serving.
Notes
- Corn syrup keeps cookies soft when frozen
- Don’t overbake – cookies should look slightly underdone
- Work quickly during assembly to prevent melting
- Wrap individually in plastic wrap for storage
