Description

Georgia Peach Ice Cream Sandwich Soft, chewy sugar cookies filled with creamy peach ice cream create the perfect frozen treat.


Ingredients

Sugar Cookies:

  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/4 cup clear corn syrup
  • 1 large egg, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 1/2 cups all-purpose flour, sifted
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Assembly:

  • 1 gallon quality peach ice cream

Instructions

  • Preheat oven to 375°F. Line two baking sheets with parchment paper.
  • Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
  • Cream butter, both sugars, and corn syrup with electric mixer until fluffy (3-4 minutes).
  • Beat in egg and vanilla until combined.
  • Gradually mix in dry ingredients until just combined.
  • Using 1 1/2-inch cookie scoop, portion dough into balls 2 inches apart on baking sheets.
  • Press each ball to 1/4-inch thickness with glass bottom.
  • Bake 10-12 minutes until edges are set and lightly golden.
  • Cool completely on baking sheets.
  • Soften ice cream slightly. Place baking sheet in freezer.
  • Scoop ice cream onto flat side of one cookie, top with another cookie.
  • Place on chilled baking sheet and freeze immediately.
  • Repeat with remaining cookies. Freeze 2 hours before serving.

Notes

  • Corn syrup keeps cookies soft when frozen
  • Don’t overbake – cookies should look slightly underdone
  • Work quickly during assembly to prevent melting
  • Wrap individually in plastic wrap for storage
