Funnel Cake Bites with Strawberry Sauce

Description

Crispy, golden bite-sized funnel cakes topped with fresh homemade strawberry sauce – all the carnival magic in your own kitchen!


Ingredients

  • 1¾ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp kosher salt
  • 1 cup whole milk, room temperature
  • 4 tbsp unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 tbsp granulated sugar
  • 1 tsp vanilla extract
  • Canola oil for frying
  • Confectioners’ sugar for dusting
  • 2 pints strawberries, hulled and halved
  • ½ cup granulated sugar (for sauce)
  • 2 tsp fresh lemon juice

Instructions

  • Make strawberry sauce: Simmer strawberries, sugar, and lemon juice for 10 minutes until berries break down. Blend until smooth and cool.
  • Mix dry ingredients in one bowl, wet ingredients in another. Combine to form lumpy batter.
  • Heat oil to 370°F in Dutch oven.
  • Scoop batter into hot oil, fry 2½ minutes, flipping once.
  • Drain on wire rack, dust with confectioners’ sugar, and serve with strawberry sauce.

Notes

Room temperature ingredients are key for smooth batter. Maintain oil temperature at 370°F for perfectly crispy bites.
