A refreshing Mediterranean chicken salad featuring homemade tzatziki sauce, tender chicken, briny olives, and tangy feta cheese.
Ingredients
- 1 cup plain Greek yogurt
- 1 cup grated cucumber, excess moisture removed
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh dill, chopped
- 1/2 teaspoon garlic powder
- 3–4 cups cooked chicken, shredded
- 1/4 cup red onion, finely diced
- 1/3 cup kalamata olives, chopped
- 1/2 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Combine Greek yogurt, grated and squeezed cucumber, lemon juice, dill, and garlic powder in a large bowl.
- Season with salt and pepper to taste.
- Add shredded chicken, red onion, olives, feta cheese, and parsley.
- Gently fold until everything is well combined.
- Refrigerate for at least 30 minutes before serving.
Notes
Don’t skip squeezing the cucumber dry, this prevents your chicken salad from becoming watery as it sits.
