Description

A refreshing Mediterranean chicken salad featuring homemade tzatziki sauce, tender chicken, briny olives, and tangy feta cheese.


Ingredients

  • 1 cup plain Greek yogurt
  • 1 cup grated cucumber, excess moisture removed
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh dill, chopped
  • 1/2 teaspoon garlic powder
  • 34 cups cooked chicken, shredded
  • 1/4 cup red onion, finely diced
  • 1/3 cup kalamata olives, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  • Combine Greek yogurt, grated and squeezed cucumber, lemon juice, dill, and garlic powder in a large bowl.
  • Season with salt and pepper to taste.
  • Add shredded chicken, red onion, olives, feta cheese, and parsley.
  • Gently fold until everything is well combined.
  • Refrigerate for at least 30 minutes before serving.

Notes

Don’t skip squeezing the cucumber dry, this prevents your chicken salad from becoming watery as it sits.
